Joyce Alm brought home bottled pickles, Alysa Compton brought bottled pears, apple sauce and fruit cocktail, Gerilin Gleed brought bottled peaches! It was yummy picnic in a jar! Elaine Glenn shared a wonderful green salad that you can layer in a pint jar for individual servings, Nora Duvall brought yummy jell-o salad and very good noodle salad, Becky Lathrop brought a "spicy corn chip salad". It was all very good, especially the visiting and sharing!!!!
Baked Beans with Bacon and Red Onions Elsa Mabbutt
Ingredients
6 cups prepared barbecued baked beans, any brand-the large can
6 slices bacon, chopped, 1/2 inch pieces
1/2 med red onion, finely chopped
1/4 c brown sugar, a couple of handfuls
1 t coarse black pepper
Directions
Preheat oven to 425 degrees F
Pour beans into casserole dish and place in oven
In a small nonstick skillet, cook bacon over med high heat 2-3 minutes. Add onions and cook 3 minutes longer. Slide the beans out of the onion. Scatter the onions and bacon around the beans. Sprinkle the brown sugar and black pepper over the onions.
Baked beans with toppings 10 minutes longer.

1 (16 oz) package bow tie pasta, cooked
3 cups cubed cooked chicken
2 T olive or vegetable oil
1/4 t garlic powder
1 c mayonnaise
1/2 Caesar or Parmesan salad dressing
1 T honey mustard or other mustard
2 t curry powder
1 t salt
1/4 t pepper
1 red bell pepper
1 large tomato, chopped
1 cup shredded carrot
1 (16 oz) package bow tie pasta, cooked

the BBQ chef at our house, so these are all his recipes. I'm lucky, he is
a great cook.
Steve's Sweet Potato BBQ Sauce

(This is great with pulled pork!)
Ingredients
2 cups
boiled yams
1/2 cup
chopped onions
2 cloves
minced garlic
2 Tbs
butter
1/2 tsp
Mesquite smoke flavor
1/2 cup
brown sugar
Scant 1/4
cup apple cider vinegar
1/4 tsp
chili powder
1/2 Tbs
molasses
1/2 Tbs
celery salt
1 tsp
Johnny's seasoning salt
1/4 tsp
black pepper
Directions
Sauté the
onions and garlic in butter until onions are soft. Add the sweet potatoes
and puree the mixture. Stir in the rest of the ingredients and
simmer until it reaches desired thickness. Used for pulled pork
sandwiches or put on chicken.
Summer Potato Salad Steve

6-8 red
potatoes, cubed
6
hard-boiled eggs, roughly chopped
1/2 cup
Miracle Whip
1/2 cup
mayonnaise
1/2 cup
sour cream
1/4 cup
chopped dill pickles
1/4 cup
chopped green onions
1/4 cup
chopped celery
1 tbs
mustard
Seasoning
salt, to taste
Directions
Boil the
potato cubes until just soft, but not falling apart. Let cool slightly.
Mix all
ingredients, slightly mashing the potatoes. If it needs a little more
liquid, add some of the juice from your dill pickles.
5 Cup Salad Steve

shredded coconut

Mix well,
chill.
Mom’s Potato Salad

potatoes boiled, cooled, peeled and diced
1 cup
onion diced
1 cup
celery chopped
4-6 eggs,
boiled, cooled, peeled and diced
3-4 dill
pickles diced
½ cup
mayonnaise
1 T.
mustard to taste
Dash salt
to taste
½ t.
apple cider vinegar
1 can
olives sliced, optional
Directions
Mix well.
Mayonnaise
is just enough to coat and be moist, otherwise to sloppy.
Refrigerate
for hour or longer for best taste.

are a guess we just do it by look and taste. **

Soft cream cheese

Combine
the above ingredients together in a gallon-sized baggie and gently
squeezing
the bag until mixed well. Ready to eat.
Grape Broccoli Salad Kathryn

one of my favorite salad recipes:
Ingredients
1 c.
grapes, preferably red
1 c.
broccoli flowerets
1 Tb.
sunflower seeds
1 Tb
crumbled cooked bacon, optional
Directions
Mix
together with non-fat sour cream thinned with a little milk. Some people
like it with a mayonnaise type dressing, but I prefer the sour cream.

barbeque sauce and put it in the oven or the crock pot with your favorite meat!
Mix cool
whip, cottage cheese, one package of orange jell-o and your favorite fruits,
pineapple and mandarin oranges for me!

dressing and I like potato salad with sweet pickles and also macaroni salad
with sweet pickles oh and of course potato chips, plain or BBQ, but

Spicy Corn Chip Salad

head cabbage, diced

Strawberry Spinach

bag spinach
1/2-1c
diced strawberries
1/4c
roatsed nuts (alomnds, pine nuts)

sugar
1/4c
apple cider vinegar
1/4c
extra virgin olive oil
1/2
tsp salt
1/4tsp
paprika
Directions
On
med heat bring sugar & vinegar to a boil. Remove from heat and then add the
extra virgin olive oil, salt and paprika. Stir and mix well. Pour dressing over
salad. Enjoy!

lb ground meat

Tbsp extra virgin olive oil

Tbsp butter

cloves garlic

red onion, chopped

box frozen spinach

tsp oregano

lb feta crumbles

Tbsp grill seasoning
Directions
Saute
in a pan on med heat extra virgin olive oil, butter, garlic and onion.
Then mix all ingredients and form meat into patties. Let rest 5 minutes before
grilling. Enjoy!
Pesto Chicken Packets

Ingredients

Chicken Breasts
1c
pesto
2
zucchinis, sliced
4
plum tomatoes, chopped
8
scallions, trimmed
salt,
pepper & extra virgin olive oil
Directions
Preheat
oven to 350. Cut 4 sheets on foil into 12inch long sheets. Drizzle 1 tsp extra
virgin olive oil into center of each sheet of foil. Season chicken with salt
& pepper. Lay 1 piece of chicken in center of each sheet and spread 1 Tbsp
pesto on top. Mound each packet with veggies. Dollop 3 Tbsp pesto over each
packet. Fold and seal packets shut baking for 35 mins. Transfer to BBQ and grill
over indirect heat for 25 minutes. Enjoy!
CHICKEN CURRY SALAD BJ

Dressing – (make
ahead and let sit in the fridge for a few hours)
1 ½ cup
mayo
1 TBS
cider vinegar
2 TBS
sugar

pineapple juice

Special Cake Mix Cake Joyce

1 cake
mix – your choice
1 package
of Jello – your choice
1 package
of Jello Instant Pudding – your choice
1 package
of Cool Whip
1 cup
cold milk
Directions

Bake the cake according to instructions on
box. After baked poke holes in cake and pour over with the
following.

Mix
together 1 package jello (your choice) and 1 cup boiling water. Let
it cool a bit then pour over cake. ( I
use a syringe and fill it with the jello and then inject it into my cake. No
needle, just the tip on the syringe.)
·
Mix the
instant pudding with 1 cup cold
milk. (I like to use the cheesecake
pudding mix.) Then mix the pudding
with the Cool Whip and pour over the cake.
·
You can top
with raspberries, blue berries or whatever fruit you would like or just leave
it with the pudding and cool whip topping.
You can
get real fancy and use strawberry jello and then slice strawberries on top of
the cake after you have injected it. Then put the cool whip and pudding
mixture over that and then decorate with extra strawberries. You can let your imagination
run away with you and use whatever flavor you want to make this cake. (I
was thinking of chocolate in some way :))

Mix a can
of well drained mandarin oranges and 1 can well drained pineapple chunks
together. Add miniature marshmallows, bananas and coconut. Then mix
in a container of cool whip and then sprinkle over it and mix well with your
choice of jello. Let set until firm and enjoy!
