Joyce Alm brought home bottled pickles, Alysa Compton brought bottled pears, apple sauce and fruit cocktail, Gerilin Gleed brought bottled peaches!  It was yummy picnic in a jar!  Elaine Glenn shared a wonderful green salad that you can layer in a pint jar for individual servings, Nora Duvall brought yummy jell-o salad and very good noodle salad, Becky Lathrop brought a "spicy corn chip salad".  It was all very good, especially the visiting and sharing!!!!




Baked Beans with  Bacon and Red Onions                       Elsa Mabbutt

Ingredients
6 cups prepared barbecued baked beans, any brand-the large can
6 slices bacon, chopped, 1/2 inch pieces 
1/2 med red onion, finely chopped
1/4 c brown sugar, a couple of handfuls
1 t coarse black pepper

Directions

Preheat oven to 425 degrees F
Pour beans into casserole dish and place in oven
In a small nonstick skillet, cook bacon over med high heat 2-3 minutes.  Add onions and cook 3 minutes longer.  Slide the beans out of the onion.  Scatter the onions and bacon around the beans.  Sprinkle the brown sugar and black pepper over the onions.

Baked beans with toppings 10 minutes longer.  

Chicken Pasta Salad                                                            Elsa Mabbutt




Ingredients
1 (16 oz) package bow tie pasta, cooked
3 cups cubed cooked chicken
2 T olive or vegetable oil
1/4 t garlic powder
1 c mayonnaise
1/2 Caesar or Parmesan salad dressing
1 T honey mustard or other mustard
2 t curry powder
1 t salt
1/4 t pepper
1 red bell pepper
1 large tomato, chopped
1 cup shredded carrot



Directions
In a large bowl, toss pasta, chicken, oil and garlic powder.  Cover and chill.  In a small bowl, combine mayo, salad dressing, mustard, curry powder, salt and pepper, cover and chill.  Just  before serving, add the red pepper, tomato, carrot and dressing to pasta mixture; gently toss.





Steve is the BBQ chef at our house, so these are all his recipes.  I'm lucky, he is a great cook.

Steve's Sweet Potato BBQ Sauce                                          Steve Flynn
(This is great with pulled pork!)



Ingredients
2 cups boiled yams
1/2 cup chopped onions
2 cloves minced garlic
2 Tbs butter
1/2 tsp Mesquite smoke flavor
1/2 cup brown sugar
Scant 1/4 cup apple cider vinegar
1/4 tsp chili powder
1/2 Tbs molasses
1/2 Tbs celery salt
1 tsp Johnny's seasoning salt
1/4 tsp black pepper

Directions
Sauté the onions and garlic in butter until onions are soft.  Add the sweet potatoes and puree the mixture.  Stir in the rest of the ingredients and simmer until it reaches desired thickness.  Used for pulled pork sandwiches or put on chicken.




Summer Potato Salad                                                              Steve Flynn



Ingredients
6-8 red potatoes, cubed
6 hard-boiled eggs, roughly chopped
1/2 cup Miracle Whip
1/2 cup mayonnaise
1/2 cup sour cream
1/4 cup chopped dill pickles
1/4 cup chopped green onions
1/4 cup chopped celery
1 tbs mustard
Seasoning salt, to taste

Directions
Boil the potato cubes until just soft, but not falling apart.  Let cool slightly.

Mix all ingredients, slightly mashing the potatoes.  If it needs a little more liquid, add some of the juice from your dill pickles.



5 Cup Salad                                                                             Steve Flynn

Ingredients
1 can crushed pineapple, drained
1 can mandarin oranges, drained
1 cup miniature marshmallows
1 cup shredded coconut
1 small container sour cream

Directions
Mix well, chill.



Mom’s Potato Salad                                                          Alice Garoutte

 Ingredients
6-8 potatoes boiled, cooled, peeled and diced
1 cup onion diced
1 cup celery chopped
4-6 eggs, boiled, cooled, peeled and diced
3-4 dill pickles diced
½ cup mayonnaise
1 T. mustard to taste
Dash salt to taste
½ t. apple cider vinegar
1 can olives sliced, optional

 Directions
Mix well.
Mayonnaise is just enough to coat and be moist, otherwise to sloppy.
Refrigerate for hour or longer for best taste.
**Measurements are a guess we just do it by look and taste. **


Friendship Fudge                                                              Alice Garoutte

Ingredients
4  cups Powder sugar
3 oz. Soft cream cheese
½ cup Soft margarine
½ cup Coco powder
1 tsp. Vanilla

Directions
Combine the above ingredients together in a gallon-sized baggie and gently
squeezing the bag until mixed well. Ready to eat.


 Grape Broccoli Salad                                                        Kathryn Hales
Here is one of my favorite salad recipes:

Ingredients
1 c. grapes, preferably red
1 c. broccoli flowerets
1 Tb. sunflower seeds
1 Tb crumbled cooked bacon, optional
Directions
Mix together with non-fat sour cream thinned with a little milk.  Some people like it with a mayonnaise type dressing, but I prefer the sour cream.

Take any barbeque sauce and put it in the oven or the crock pot with your favorite meat!

Mix cool whip, cottage cheese, one package of orange jell-o and your favorite fruits, pineapple and mandarin oranges for me!

I like BBQ chicken and I like simple salad in a bag with ranch or thousand Island dressing and I like potato salad with sweet pickles and also macaroni salad with sweet pickles oh and of course potato  chips, plain or BBQ, but Winter is back today so hope May warms up!!!


Spicy Corn Chip Salad (from Rachael Ray)                   Becky Lathrop



Ingredients
1/2 head cabbage, diced
1 bell pepper, diced
1-2 jalapenos, diced
3c. sweet white corn 
1/2 red onion, diced
1/4-1/2 c mayo
1c monteray jack cheese, shredded
1/2c crushed Fritos

Directions
Combine all ingredients and top with the Fritos. Enjoy!




Strawberry Spinach Salad (from a friend)                      Becky Lathrop

Ingredients
1 bag spinach
1/2-1c diced strawberries
1/4c roatsed nuts (alomnds, pine nuts)
1/2c sugar
1/4c apple cider vinegar
1/4c extra virgin olive oil
1/2 tsp salt
1/4tsp paprika

Directions
On med heat bring sugar & vinegar to a boil. Remove from heat and then add the extra virgin olive oil, salt and paprika. Stir and mix well. Pour dressing over salad. Enjoy!


Grilling
 Spinach & Feta Burgers                                                  Becky Lathrop
(from my sister-she is a very talented cook!)

Ingredients
1 lb ground meat
1 Tbsp extra virgin olive oil
1 Tbsp butter
2 cloves garlic
1/2 red onion, chopped
1 box frozen spinach
2 tsp oregano
1/4 lb feta crumbles
1 Tbsp grill seasoning

Directions
Saute in  a pan on med heat extra virgin olive oil, butter, garlic and onion. Then mix all ingredients and form meat into patties. Let rest 5 minutes before grilling. Enjoy!


Pesto Chicken Packets (also from my sister)                  Becky Lathrop

Ingredients
4 Chicken Breasts
1c pesto
2 zucchinis, sliced
4 plum tomatoes, chopped
8 scallions, trimmed
salt, pepper & extra virgin olive oil

Directions
Preheat oven to 350. Cut 4 sheets on foil into 12inch long sheets. Drizzle 1 tsp extra virgin olive oil into center of each sheet of foil. Season chicken with salt & pepper. Lay 1 piece of chicken in center of each sheet and spread 1 Tbsp pesto on top. Mound each packet with veggies. Dollop 3 Tbsp pesto over each packet. Fold and seal packets shut baking for 35 mins. Transfer to BBQ and grill over indirect heat for 25 minutes. Enjoy!


CHICKEN CURRY SALAD                                                    BJ Jackson

Ingredients
Dressing – (make ahead and let sit in the fridge for a few hours)
1 ½ cup mayo
1 TBS cider vinegar
2 TBS sugar
2 TBS pineapple juice
1 tsp curry powder

Salad
½ cup coconut
1/3 cup raisins
1 can pineapple tidbits (drained)
1 can mandarin oranges (drained)
2 lbs cooked and cubed chicken
4-5 sticks chopped celery
½ bunch chopped green onion

Directions
Mix with dressing just before serving.


Baked Beans – Meri’s Recipe                                                 BJ Jackson

Ingredients
4 lg cans Busch baked beans
2 cups brown sugar
        Stir until sugar is dissolved
1 chopped onion
1 cup ketchup
¼ cup mustard
½ cup BBQ sauce
1 tsp garlic
1 tsp seasoned salt
1 Tbs Worcestershire sauce
½ pkg Pepperoni
1 bag Little Smokies

Directions
Bake at 350 for 1 ½ hour


Meat Marinade                                                                Marlene Hughes
(we love using this for steak, chicken, and kabobs...keeps the meat moist, especially to BBQ!)

Directions
1 c. salad oil
1/2 c. lemon juice
1/4 c. prepared mustard
3/4 c. soy sauce
2 cloves garlic
1/4 c. Worcestershire sauce
1-2 tsp. pepper

Directions
Marinate overnight, or longer.


Marinated Vegetables                                                    Marlene Hughes

Ingredients
1 can white corn
1 can LeSeur early peas
1 can french green beans
           Drain the above.

Add:
1/2 c. chopped celery
1/2 c. chopped green pepper
1/2 c. chopped green onions
small jar pimientos

Directions 
Bring to boil:
1 cup sugar
3/4 c. white vinegar
1/2 c. salad oil
2 Tbsp. celery seed

Boil for 1-2 minutes.  Cool, pour over veggies
and refrigerate overnight.  Serve cold.


Special Cake Mix Cake                                                            Joyce Alm

Ingredients
1 cake mix – your choice
1 package of Jello – your choice
1 package of Jello Instant Pudding – your choice
1 package of Cool Whip
1 cup cold milk

Directions
·         Bake  the cake according to instructions on box.  After baked poke holes in cake and pour over with the following. 
·         Mix together 1 package jello (your choice) and 1 cup boiling water. Let it cool a bit then pour over cake. ( I use a syringe and fill it with the jello and then inject it into my cake. No needle, just the tip on the syringe.)
·         Mix the instant pudding  with 1 cup cold milk.  (I like to use the cheesecake pudding mix.)  Then mix the pudding with the Cool Whip and pour over the cake.
·         You can top with raspberries, blue berries or whatever fruit you would like or just leave it with the pudding and cool whip topping. 

You can get real fancy and use strawberry jello and then slice strawberries on top of the cake after you have injected it.  Then put the cool whip and pudding mixture over that and then decorate with extra strawberries. You can let your imagination run away with you and use whatever flavor you want to make this cake.  (I was thinking of chocolate in some way :))


Ease fruit salad.                                                                         Joyce Alm

Ingredients
1 package of Jello
1 can mandarin oranges
1 can pineapple chunks
Miniature marshmallows
Bananas
Coconut

Directions
Mix a can of well drained mandarin oranges and 1 can well drained pineapple chunks together.  Add miniature marshmallows, bananas and coconut.  Then mix in a container of cool whip and then sprinkle over it and mix well with your choice of jello.  Let set until firm and enjoy!

Saturday, May 5th at 10:00 at the Selah Stake Center
Those who are singing need to leave about 7:45 and all others around 9:00
It will be a wonderful day filled with enlightenment and service!




Evening Enrichment is Tuesday,
 May 15th at 6:30.
We will meet at the church for a picnic and summer outing ideas.
Please turn in your favorite salad and barbecue recipes that you use in the summers, we will be making a recipe book for all to take home.  The recipes will also be posted on our blog.  We will be eating sub sandwiches, salads and yummy summer desserts.  See you there!!!!
